I've always been big fan of Proxomitron, which I use all the time, but I've only just found out about a few related or similar things:
Prox - user interface enhancements to Proxomitron. It patches an original Proxomitron install.
Proximodo - open source re-implementation of Proxomitron, very nice, just been trying it out.
Privoxy - another ad-busting proxy.
